Flapjacks / pancakes for breakfast
Flapjacks (known as pancakes in America) is a great easy breakfast where you can go all out. We enjoyed it this morning with a sweet/salt combo, bacon and caramel sauce. We also had cheese, preserves and fresh cherries.
I will be calling this flapjacks (since in South Africa pancakes = crepes). So to avoid confusion, just take note. You do not need a lot of ingredients and it hardly fails, it is easy to eat and can be mixed with salt or sugar, what a great option to make!
I have a very basic recipe which I found on Yuppiechef.com.
- 1 cup cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
Whisk together and mix well:
- 1 egg
- 1 cup milk
- 3 tablespoons melted butter
Add the egg mixture to the dry ingredients and mix well.
Let is stand for 20min
2 tablespoons of batter per flapjack
Bake on a medium heat pan until the flapjack starts to make bubbles, then you can flip it over
You can add blueberries to the batter and serve it with fresh blueberries and syrup. Or just make plain flapjacks with the usual syrup or honey or preserves and cheese. Or do the sweet salt combo with bacon, cheese and honey. There is so much you can do and everything can be set out beautifully.
